Banana Bread and Strawberry Skewers


Today I've been making banana bread, I tend to make it whenever I've got bananas which have gone over ripe as it's a great way to use them up rather than wasting them.  It's a recipe from the Hummingbird bakery book, it does take just over an hour in the oven (it says 1 hour in the book but I find the middle hasn't cooked then.  Todays doesn't look very pretty - the middle had split and the tops a little bit burnt but it tastes yummy.

I also did Strawberry and Marshmallow Skewers for desert they aren't really baking and take hardly any effort but taste scrummy and look pretty, it's just sliced strawberries, marshmallows and melted chocolate and you can make them with any fruit really then just drizzle on melted chocolate and eat :-)

Cherry and Coconut Flapjacks

One of my favourite hobbies is baking so I thought I'd start a blog of the things I make.  Today I've made Cherry and Coconut flapjacks from a recipe from a friend.
This is how to make them:
Cover a baking tray in grease proof paper.
Pre heat the over to 160oC
Melt 200g of butter in a pan with 170g caster sugar and 2 table spoons of golden syrup.
Then add 170g of oats, 100g dessicated coconut and 70g of glacĂ© cherries, mix together well.
Pour the mixture into the baking tray and spread with a spatula or a knife.
Bake in the oven for 20 minutes.

Leave to cool on a wire rack for 5 mins then cut into pieces - the mixture will still be soft so you can use the spatula - then leave in the tray on the wire rack until cooled and set.
